Preparing all the traditional delicacies is a must especially amongst the older generations…Chills of winters, Woolen clothes, Anghithis, Sarson and Folk songs… A regular scene in the state of Punjab during the day time…
All the women sit in the gardens while preparing the food with all the love…Sometimes potatoes are being baked in the anghitis and sometimes the brinjal…That earthen aroma and that flavorful taste makes the day worth… 🙂 A traditional Punjabi thali infuses a lot of stuff…But a mini thali also makes a flavorful moment… Hereby, I am presenting my delicious Mini Punjabi Thali which comprises of
- Kanda Baingan Bharta
- Kadhi
- Rice
- Aloo Tamatar ki sabzi
- Namak Ajwain k paranthe
- Papad
- Sarson ka saag & Makke ki roti
Since most of the recipes are already on the blog, I am linking those recipes one by one below. Apart from that, let’s have a look on the flavorful recipe of Kanda Baingan Bharta and Namak Ajwain K Paranthe.
Kanda Baingan Bharta
Kanda Baingan Bharta is given this name as the Baingan i.e. Brinjal is slowly roasted on the kandas or coal over angithi. Once roasted, the pulp is taken out and then prepared with lots of tomatoes, garlic and coriander leaves.
Serves: 2
Preparation time: 20 mins
Cooking time: 10 mins
Ingredients
- Roasted Brinjal
- 1 medium onion – sliced
- 6 tomatoes – Diced
- 1 tsp ginger – finely chopped
- 4 garlic cloves – sliced
- 1 bowl finely chopped corriander leaves
- 1 tsp Mustard oil
- 1 tsp Kashmiri Mirch powder
- 0.5 tsp Garam Masala Powder
- Salt as per taste
Recipe
- Heat oil in a pan. Add ginger, garlic and onion
- Add spices
- Roast brinjal over the angithi. Take out the pulp
- Add pulp in the pan and roast well
- Now add tomatoes and salt
- Let it simmer for 10 mins
- Mix well and sprinkle lemon
- Add the coriander leaves and mix well
- Kanda baingan bharta is ready
Namak Ajwain K Paranthe
Ingredients:
- 2 cups whole wheat flour
- 1 tsp carom seeds
- 1 tsp oil
- Salt as per taste
- 1 cup Water
Recipe
- Mix well and make dough
- Make simple round or triangular paranthas accordingly
