Aloo K Samose – An Indian Treat!

Samose – A grand snack to which every Indian swears by. Be it with your morning tea or an evening snacks…90% of us love the surreal combo of samosa with green chutney and chai. No matter whether one is on diet or not, samosa waali cheat diet to banti hai 😀 Isn’t it?

Till now I am sure you guys are aware of my traditional Indian household in which I am born and brought up and then got married again to a traditional family… My both the families love to savor on these grand meals ( now not very often due to age) but yes still cheat days are spent while indulging in home made samosas, kachori, laddu and mathri… During the golden era of my grand mom, we kids used to go to school while having a breakfast of Bournvita Milk [ Err – I hate milk till date 😦 ] , 1 Mathri and 1 koor ka samosa…It was indeed healthy as home made stuff that too made of wheat have no competitors since ages… My grandmom opened the world of amazing recipes to me and one such delicacy from her ‘World’ was – Home made Aloo K Samose.

Let’s have a look on the Recipe of Aloo K Samose.

Makes – 8 pieces

Preparation time – 10 mins

Baking time – 20 mins

For the dough

  • 2 cups Flour
  • 1 tsp Ajawain
  • 1/2 tsp Baking powder
  • 1.5 tsp salt
  • 1 tbsp Oil
  • 1/2 inch finely chopped green chilly
  • Water for kneading

For the filling

  • 4 medium sized Potatoes – Boiled and Slightly grounded
  • 1/2 cup peas
  • 1/2 cup cashews and raisins
  • 1 tbsp Ghee
  • 1 tsp Cumin seeds
  • A pinch of Astoefida (This helps in keeping stomach healthy)
  • 2 tsp Garam Masala
  • 1 tsp Red chilly powder
  • 1 tsp Mint powder
  • 1/2 tsp Amchoor powder
  • Roughly Grounded – 2 cloves and 6 black pepper
  • 1/2 inch Ginger – finely chopped
  • Salt as per taste
  • 1 cup finely chopped coriander leaves
  • 1 cup finely chopped mint leaves

Recipe

For Aloo Filling

Heat ghee and put cumin seeds and Astoefida. Once warm, add potato along with all the other ingredients except coriander & mint leaves. Mix well and fry till it’s done. It will take almost 10 mins to fry it well. Sprinkle herbs and mix well. Aloo mixture is ready!

[We always put Astoefida while making fried delicacy is because of it’s super amazing quality of keeping the stomach cool. Maida ( All purpose flour) holds certain elements which are little heavy on stomach and may cause indigestion.]

For the dough

Knead a soft yet firm dough from the ingredients. Feel free to add or subtract the quantities as per your taste.

Also make the flour paste for sticking the corners. 1 tbsp Maida + 2 tbsp water = Flour paste

Now,

Make 4 balls out of dough and roll them in oval shape. Slit from the mid and put the flour paste on the corners. Now make the samosa shapes and put the aloo-pea filling. Chalk out the preferred shape and close the ends.

Now fry  the samosas till golden brown in color.

Serve it with Mint Chutney and Tea! 🙂
