Dawn gives you hope. It gives you a promise to hold something beautiful and bring your dreams alive. Dawn is the power, the music, the magic and most important – the desire. It keeps your spirits high and let you relive your moments and make new memories.
My this blog post is little heavy on words and thoughts and yes I agree that I have written it flawlessly while giving words to each and every emotion which I am going through right now. I am not well and my left eye is giving me lot of pain due to epsiciliritis and the vision is blur. I am scared that whether my eye will be back to normal or not…there’s a hope for me and the promise from the doctors – But I am sad and waiting for the magic. Perhaps it has happened for the first time so I am more lost but yes – I am waiting for the dawn!
Every task is a challenge for me this time – be it cooking, travelling, working or writing… But I am determined to do it…with all my will power and confidence. Wish me power!

Going back to the importance of Dawn in our lives, hereby presenting this beautiful Berrilicious Pudding prepared for the theme of #colonialrecipes. This pretty masterpiece gives me a hope and it’s unique colors keep me motivated that yes – dawn is near and I will be back to normal soon! 🙂
Berrilicious Pudding is a signature modern transformation of age old authentic Trifle Pudding which holds a unique importance in Anglo-Indian cuisine. A very popular dessert – Trifle Pudding – it is prepared using spongy cake, fresh cream and lots of jams and fruits. 🙂
Keeping the ingredients of Anglo Indian – Trifle Pudding in mind, hereby I present my Berrilicious Pudding prepared using home made spongy carrot cake, fresh strawberry compote, fresh blueberry compote and Mascarpone cheese.

Let’s have a look on the recipes.
Preparation time: 20 mins + 30 mins baking time
Serving time: 10 mins
Ingredients
For the carrot cake
- 100 gms APF ( Maida)
- 50 gms wheat flour
- 2 tsp baking powder
- 100 gms castor sugar
- 2 eggs
- 100 gms butter
- 2 tsp Garam Masala
- 1 tsp Cinnamon powder
- 1 cup freshly grated Carrots
- 1/2 cup coconut powder
For blueberries compote
- 10 blueberries
- 1 tbsp sugar
- 1 tsp water
For strawberries compote
- 10 big strawberries
- 2 tbsp sugar
- 2 tsp lemon juice
For Mascarpone cheese
- 4 tbsp Mascarpone cheese
- 1 tbsp Icing sugar
Method
For Carrot cake
- Sieve flours + spices + baking powder together.
- Whip butter and castor sugar till smooth. Add eggs one at a time and whip well.
- Add grated carrots and coconut powder.
- Mix well the dry and wet ingredients.
- Bake in a pre-heated over for 30 mins at 160 degrees. Keep an eye from 25mins onward to avoid over baking. Do not forget to cover the top of the cake with foil after 15 mins.
- Your spiced carrot cake is ready. Cool it!
For Blueberries compote
- Heat pan and put finely chopped blueberries.
- Add sugar and keep the flames on sim.
- Let it simmer for good 10 mins. Add lemon juice.
- Blueberry compote is ready. Cool it!
For Strawberry compote
- Heat pan and put finely chopped strawberries.
- Add sugar and keep the flames on sim.
- Let it simmer for good 10 mins. Add lemon juice.
- Strawberry compote is ready. Cool it!
For Mascarpone cheese icing
- Mix Mascarpone cheese with icing sugar.
- Put in piping bag and keep it refrigerated.
Now, to serve:
- Slice the carrot cake in two halves
- Take 3 round slices of it using circular ring
- Put one slice on the platter
- Cover it with a layer of Mascarpone cheese.
- Put a layer of Blueberry compote. Swirl it with the help of tooth pic.
- Put second slice over it.
- Repeat steps 4-5 with strawberry compote.
- Put the final slice over it.
- Decorate with piped Mascarpone cheese and compotes.
- Garnish with caramel nets and fresh mint leaves.

Hey Kriti if the doctors have assured you that in time you will get back to normal then just have patience. Love the trifle pudding and using carrot cake as the base is a brilliant idea.
