If we look all around the World, we see hundreds of ingredients and thousands of recipe. Each recipe is unique in it’s own way and the best part is their origins and flavors. Me, being an enthusiastic food explorer, love to read and try various cuisines of the World. This time it was all about Mexico.
Before starting, I would like to mention that I am contributing this recipe in our 48th #FoodieMonday Blog hop event which focused on Mexican Cuisine this week.
Tortillas are prepared at home and the complete Quesadillas are also home made. Filled with the flavors of chillies, cheese and tomatoes, this famous Mexican dish is itself unique and flavorful.
Let’s have a brief look over Mexican Cuisine –
Mexican cuisine is one of the most popular meal choices in the United States. Tacos, Enchiladas, Burritos, and Quesadilla are just some of the meals that have been integrated into our daily diets. Mexican recipes are often spicy, full of color, flavor and come will extra cheese.
The quesadilla is an essential recipe and meal in the Mexican culture. It is also to be considered authentic Mexican food. Yet, the quesadilla has roots that expand beyond Mexican traditions. For example, the corn tortilla is native American. The cheese, pork, beef, and lettuce that are essential ingredients in the quesadilla recipe originated from Spanish cultures. Yet, the famous Mexican hot sauce that is made from chili pepper is indigenous to Mexico.Unknown facts about the Mexican food history is that the common spices used to cook traditional Mexican dishes are not from Mexico. Black pepper, cinnamon, coriander, and oregano are all from Spanish origins.

Let’s move on to the Recipe –
For the Tortillas
- 2 cups All Purpose Flour
- A pinch of Baking powder
- 2 Tbsp Oil
- Warm water
For the Stuffing
- 100 gms Cottage cheese
- 1 onion – finely chopped
- 1 capsicum – finely chopped
- 2 Tomatoes- finely chopped
- Sweet Corns
- 2 Tbsp tomato sauce
- Mooz Jalapeno Sour Cream
- Mooz Mozarella Cheese
- Salt to taste
- Pepper powder
- Oil for frying
Tortillas – Knead a soft dough using all the ingredients. Knead it for at least 8-10 mins. Let it rest for 10 mins and divide into 6 equal parts.Roll out thin chapati like structure out of it and fry on both the sides with light oil. Soft Tortillas are ready!! No need to buy them from markets! 🙂
Stuffing – Heat pan and add onions. Add cottage cheese, boiled corns, capsicum and fry well. Now add tomatoes, tomato sauce and spices. Cover with lid so that tomatoes are soften and mix well. Now switch off the flame and grate Mozzarella cheese over it. Stuffing is ready.
Now take the tortillas and spread the stuffing all over. Spread a dollop of Sour Cream which gives it a spicy flavor for which Mexico is famous for. 🙂
Cover it with another Tortilla and fry it well on both sides. Serve with Mexican Salsa.
