Crazy Calzones and Thin Crust Focaccia for those cold winters!

Originated in Naples, Italy – Calzones are kind of stuffed pizzas folded into half moon shape. They are typically made up of salty bread dough filled with lots of fresh veggies or chicken, folded with Mozzarella or ricotta cheese and baked / fried at high temperatures.


I prefer juicy Calzones with lots of fresh veggies, eggs, cheese and home cooked tomato sauce. Baked till golden brown, this recipe gels well with a fresh juice or a hot coffee. Let’s have a look on the recipe.

Serves: 4

Preparation time: 1 hr ( 45 mins dough raising)

Cooking time: 30 mins


For the dough:

  • 1/2 cup warm water
  • 1 tsp sugar
  • 1 tsp active dry yeast ( Bluebird)
  • 1 cup Wheat Flour
  • 1 cup All Purpose Flour
  • 1 cup freshly chopped Parsley leaves ( Winter bliss 😉 )
  • Salt – According to taste
  • 1/2 cup warm Milk
  • 2 tbsp Olive oil

For Stuffing:

  • Fresh Mushrooms – 1 cup
  • Red/Green/Yellow Bell Peppers – 1 cup
  • Sliced Onions – 1/2 cup
  • Garlic grated – 1 tsp
  • Finely chopped Spring onion leaves – 1 cup
  • Boiled corns – 1/2 cup
  • 3 eggs
  • Mozzarella cheese grated – 1 cup
  • Dried herbs – 1 tbsp
  • Black pepper – 1 tsp
  • Salt – According to taste


For dough:

  1. Dissolve sugar in the warm water and add yeast. Mix lightly and let it prove for 20 mins.
  2. Sieve the flours + salt together. Add freshly chopped parsley leaves.
  3. Add 1 tbsp olive oil.
  4. Knead it well using yeast water and warm milk. Add more water if required. Once kneaded, brush it with olive oil and let it rest for 45 mins. Dough will be doubled in it’s size.

For stuffing:

Mix all the ingredients of stuffing together and bake it in a preheated oven for 15 minutes at 180 degrees. Stuffing is ready.


Divide the dough into 3 to 4 balls and roll them out. Brush it with Olive oil on both the sides. Arrange stuffing on half of the rolled dough and grate extra cheese over it along with some dried herbs. Cover it with other half part till it attains a crescent shape. Make the other calzones in the same manner.

Bake them at a pre-heated oven for 25-30 mins at 180 degrees. Brush them lightly with milk or egg whites for the perfect glaze. 🙂
