Once you return back from office you feel hungry, especially the people who are not in the habit of eating in office canteens. They come back to home like a hungry lion 😀 i.e jo mile sab kha jao (eat whatever you find).
I often face this situation many a times at home when my husband returns back from office. He is a big foodie but the best part about him is – he will always prefer home cooked food at any given moment. He is not one of those person who binge upon samosas, bread rolls, chowmein along with a cup of tea in office canteen. But once back from office, he is like – Jaldi kuch khilao bhaut bhookh lagi! 🙂 ( Give me something to eat as I am too hungry ) .
Now most of the time it becomes challenge for me to prepare healthy snacks at 7:00 pm and then dinner at 9:30 pm. Since I am also a working women, it often becomes a difficult task but now after an experience of almost 3 years, I have prepared a perfect list of easy to do snacks which are healthy, delicious and can be cooked in just 20 mins. 🙂
One such item on my menu is : Simple Stir Fried Pasta with fresh veggies.
It’s a simple dish prepared in just 15 minutes, consumes as little as 1 tsp of olive oil and incorporates the goodness of fresh green vegetables along with much loved mushrooms, bell peppers etc.
Let’s have a look on the recipe!
Preparation time: 10 mins
Cooking time: 10 mins
- Boiled Pasta al dente – 2 cups
- Mushrooms – sliced – 1 cup
- Red & Yellow bell peppers – diced – 1 cup
- Baby corn – sliced – 1/2 cup
- Spring onions – 1/2 cup
- Brocolli – sliced – 1 cup
- Garlic – minced – 1 tbsp
- Olive oil – 1 tsp
- Black pepper – 1 tsp
- Mixed dried herbs – 1 tsp
- Salt – According to taste
For garnishing – Lettuce leaves
Now the best part about pasta is, the moment you keep in on the boil, you can start cutting your veggies side by side. As a result, more output in same time. Moreover Pasta being full of carbohydrates, which is not that recommended daily, but just like me if you double the amount of fresh veggies you are putting into it, it will be a healthy bowl of comfort food! 🙂
Take olive oil in a wok. Add spring onions and fry for few seconds.Add brocolli and garlic. Fry again. Now add bell peppers, mushrooms, baby corns and stir fry all of them on high heat. Now add Pasta al dente. Sprinkle black pepper, salt and dried herbs. Stir fry on high for 2 mins.
Pasta is ready.
Serve hot with fresh lettuce leaves and spring onions! 🙂
Though post this, we often skip our dinner and end up having a glass of fresh buttermilk! 🙂
