Weekend fun with some Vodka and Starters!

Come Friday and life seems all settled. Fun, Friends, Food and Music – This is my way of celebrating weekend but yes a minor difference : I love to prepare all weekend stuff on my own Reason being – I get two fabulous days to experiment on my recipes and few fabulous friends & family to test upon. 😀 Yes. My friends & family are my biggest critique yet strongest support and I love to make them enjoy home cooked delicacies quite often.

This weekend I was craving for some succulent kebabs and green apple flavored drink.We immediately made plans and invited our friends for a gala feast that too healthy no oil food. The menu was very simple.

  • Some soft drinks for the non-alcoholics
  • Some Vodka Martini for the alcoholics
  • Succulent Seekh Kebabs
  • Lip smacking Paneer Tikkas
  • Peanut Masala
  • Lays Chips 😀 ( I love it! )

Before you crave for this particular weekend moment, let me jot down the two brilliant recipes which I am sure you guys are going to love.

Paneer Tikkas 

Preparation time: 2 hours

Cooking time : 30 mins

Ingredients

  • Cottage Cheese  – 200 gms
  • Fresh green capsicums – 2
  • Onion – 1 big size
  • Tomatoes – 2 big size
  • Hung curd – 100 gms
  • Turmeric powder – 1 tsp
  • Red Chilli powder – 1 tsp
  • Shan tandoor masala – 2 tsp
  • Salt – According to taste

Method

  1. Cut the cottage cheese and vegetables in square shapes.
  2. Beat hung curd in a bowl. Add spices and mix well.
  3. Add cottage cheese and vegetables into it. And mix it till the time all the ingredients are covered with curd.
  4. Keep them marinated for atleast 2 hours.
  5. After 2 hours, put your tandoor on the preheat mode.
  6. Arrange the marinated mixture over it.
  7. Cook it for atleast 25 mins turning in all the directions for even cooking.
  8. Arrange it over the plate and sprinkle some chat masala over it.
  9. Paneer Tikka is ready! 🙂

Now comes the chance of succulent Seekh Kebabs.

Seekh Kebabs

Preparation time: 30 mins

Cooking time: 40-45 mins

Ingredients

  • Boiled Potatoes – 4
  • French beans – 250 gms
  • Carrots – 100 gms
  • Spinach – 250 gms (Yes I added it for healthy cooking)
  • Onion – 1
  • Garlic – 1 tbsp
  • Ginger – 1 tbsp
  • Bread crumbs mixture – 2 cups
  • Gram flour – 2 tbsp
  • Peanuts – 1 cup
  • Lemon juice – 2 tbsp
  • Red chilli powder – 1 tsp
  • Shan tandoor masala – 2 tsp
  • Salt – according to taste
  • Oil – 1 tbsp ( for brushing purpose)

Method

  1. Chop all the vegetables very finely.
  2. Prepare a mixture by adding all the ingredients shown above.
  3. Fry peanuts and crush it with the help of chopper. Add it to the mixture.
  4. Give desired shape to the kebabs. Add stick ( seekh ) in case you want. (I skipped it)
  5. Bake it in the tandoor for 4o mins on low heat.
  6. Keep brushing it with oil for smooth texture.
  7. Serve it hot and crisp along with some delicious sauce or chutney! 🙂
