Mini Burgers – The Pocket Parcels

After a hectic day the evening tea often calls for warm crispy snacks along with a hot cup of tea or coffee. But every time those fritters may add extra kilos on your body. Now what? Let’s explore some baked and healthy options to enjoy the evenings!


Note: Dough making procedure for both the burgers and pizza will be almost same.

Mini Burgers

Preparation time: 1.5 hr

Cooking time: 20 mins

Serves: 8 burgers


For Dough

Wheat flour / Maida : 2 cups

Instant active yeast : 1 tsp

Sugar: 1/2 tsp

Baking Powder: A pinch

Salt: 1/2 tsp

Water: 1/2 cup

For Patty

I try to stay away from fried snacks therefore instead of Aloo tikki ( Potato Patty ) or so I prepare Baked mix veg kebabs for the filling.

  • 2 Cups Finely chopped mix vegetables ( Onions, Beans, Capsicums, Boiled Potatoes, Carrots, Broccoli etc)
  • 1/2 Cup Cottage cheese
  • 1/2 Cup Boiled peas
  • 1 tbsp Cornflour
  • 2 tsp Garam Masala
  • Salt – As per taste
  • 1/2 cup chopped coriander leaves
  • 1 tbsp olive oil
  • 1 tsp olive oil for brushing


For the buns

Warm the water ( 15 secs in MW). Add sugar. Mix. Sprinkle Yeast. Mix. Cover and keep it in warm place for 20 mins. Once you get the frothy mixture, its ready.

Now take flour, add salt and baking powder. Put frothy water. Knead the dough for at least 10 mins. Spread some oil ( 1/2 tsp) and knead it again. Cover it and keep it in warm place till it double up ( 45 mins approx)

Once the  dough rises, knead it lightly once again. Make 8 small balls.Cover it again and keep it in warm place. ( 10 mins)

Keep the oven in preheat mode. Once the balls rises again, bake them at 180 degrees for about 20 mins. Keep brushing with egg whites or milk once in every 10 mins. This will give the buns their much required glow. After 20 mins. Have a look. Buns will be ready. Hurray!!! 🙂

For the patty

Mix all the chopped vegetables together. Add peas and cottage cheese. Mix all the other ingredients and knead well. Now make 8 small balls out of it.

Put your oven on grill mode.( I prepared it on Electric Griller. ) Let them cook and grill for at least 20 mins. Keep brushing them with olive oil.

Crunchy patties are ready.

Assemble it

Now take a bun. Slit it in two. If you want use some butter and cook it on both sides for the crunchy texture. I prefer the normal bun. Put 1 patty in each burger. Cover it with Tomato Ketchup or any other dip of your choice. Put a cheese slice if you want. Sprinkle Coriander leaves.

Your scrumptious plate of healthy snacks is ready. Serve it with a hot cup of tea / coffee. 🙂
