Come Monsoons and we start craving for tea / coffee along with a plate full of fried fritters. That plate full of fritters is somewhat orgasmic but is it healthy every time? No! Then why not look forward for some baked and healthy options to satiate those powerful cravings? Let’s bake some flavorful breads together!!
These warm home made stuffed braids will not only take your taste palette to next level but also will carry you away with their tempting aroma.
Preparation time: 1.5 hr
Cooking time: 30 mins
For bread dough
- All purpose flour- 1 Cup
- Instant Yeast- 1/2 tsp ( I use Bluebird or Topsal brand)
- Sugar- 1/2 tsp
- Baking powder- A pinch
- Salt – 1/2 tsp
I usually take Mushrooms as the main ingredient as I simply love it. You can take whatever you want – Boiled potatoes, Cottage Cheese, Chicken etc.
- Mushrooms – Cleaned and Sliced – 1 cup
- Spinach – Chopped – 1/2 cup
- Boiled sweet corns – 1/4 cup
- Red and Yellow Capsicums – Sliced – 1/4 cup
- Brocolli – Chopped – 1/4 cup
- Onions Chopped – 1/2 cup
- Mozarella Cheese – Grated – 1/2 cup
- Tomato puree – 1/3 cup
- Tomato slices – 10 to 12
- Ginger – Grated – 1/2 tsp
- Garlic – Grated – 1 tsp
- Balsamic Vinegar – 1 tsp
- Salt and Pepper – According to Taste
- Olive oil – 2 tsp
- For glaze – 2 tbsp egg white or milk
- Sesame seeds.
- Freshly sliced cabbage, carrots and lettuce leaves.
Warm water slightly. ( 15 secs in MW) Mix sugar in it. Sprinkle Yeast. Mix it slightly. Cover it and put it in warm place for 15 mins. Once the yeast is proved ( i.e. mixture becomes frothy) mix it in flour (along with baking powder and salt) and knead a dough. Knead it for at least 10 mins. Brush it with olive oil and keep it in warm place for at least 45 mins. Dough will rise to double its size. Now knead it lightly once more and keep it away for 10 more minutes. Dough is ready.
Heat a pan and put olive oil in it. Fry onions in it. Add ginger and half of the garlic. Now add Broccoli. Stir fry it. Add mushrooms and fry for 2 mins. Now put sweet corns and capsicum. Add tomato puree and garlic. Stir fry for 1 min. Now add spinach. Add salt and pepper. Sprinkle vinegar over it. Put Mozarella Cheese and mix well. Keep it aside.
How to braid a bread?
Take a big portion of dough and role it out in a rectangle form. Make horizontal slits ( 15 – 20) on both left and the right sides. The center portion should not be touched. Arrange your stuffing on the center portion. Arrange slices of tomato over it and cover it with Mozzarella Cheese. Sprinkle some more vinegar over it.
Now start braiding the dough together. Take a slit from right end and bring it to left while covering the stuffing. Take a slit from left end and bring it to the right side. Do it till the time all the slits are braided . Cover it and let it rest for 10 mins. Keep your oven on pre-heat mode at this moment.
Now brush it with egg whites or milk. This will give your bread an extra glaze. Sprinkle sesame seeds over it if you want. Brush it with olive oil lightly.
Bake it at 180 degrees for 30 mins. Keep brushing it with eggs or milk after every 10 mins.
Once the bread is ready.. Serve it with crisp cabbage, carrots and lettuce leaves. 🙂
